Lou & Mo’s Sandwich Shoppe has birthed from a cultivation of time, experience and backgrounds in the Culinary and Hospitality industry. From cashiering, bussing tables and washing dishes, to education and higher learning, to team members and leadership positions; we have experienced all aspects of the Food & Beverage industry.
Maureen is a graduate of Johnson & Wales University. She is a strong and fierce leader. Maureen held positions such as cashier and waitstaff throughout her college years. She got her first management position immediately upon graduating from college with Legal SeaFoods, where she spent the next 7 years of her career; traveling the country opening and supporting new and current restaurants within the company. Since then, Maureen has never looked back, growing as a leader in the industry working for great companies such as The Max Restaurant group and Brinker International, managing restaurants such as Max’s Oyster Bar and Bertuccis. She has been a General Manager for the past 12 years and has managed in different concepts and segments of the industry including Fine Dining, Casual Dining, and Fast Casual.
Luis Febus has been in and around restaurants since the age of 15. He scooped ice cream, bussed tables, cashiered and worked for several fast food restaurants such as McDonald’s and Taco Bell throughout High School. During college, where he majored in Culinary Arts and Hospitality Management, he worked full time as a line cook primarily for many years, learning hands on all of the tricks of the trade all along. He cooked in all different types of restaurants; from local diners, to fine dining and everything in between, spending most of his time working for large corporations such as Chili’s, The 99, Pizzeria Uno’s and Ruby Tuesday’s. He got his first opportunity in management at On The Border, where he started off as a line cook, and worked his way up to Kitchen manager, Hospitality manager, and eventually General Manager. Luis has also worked in fields related to the restaurant and Hospitality industries such as Food Distribution and Sanitation, working for large companies like Ecolab and US Foods.
Combined, Luis and Maureen have over 50 years of experience. Their backgrounds bring tons of education, training and leadership to the restaurant industry; where they hope to bring all of their acquired skills to ownership through Lou & Mo’s Sandwich Shoppe..
